Bruno DiFabio, known as "Lord of the Pies," admitted in federal court in Bridgeport last October that he filed false income and payroll returns that the IRS said he used to duck $816,954 in taxes.
The Ridgefield resident and six-time World Pizza Champion owns Pinocchio Pizza in New Canaan and Wilton; Amore Pizza in Scarsdale; Amore Cucina and Bar in Stamford; and ReNapoli Pizza in Old Greenwich.
DiFabio was released on a $100,000 bond pending sentencing.
He recently opened Lord of the Pies on Grigg Street in Greenwich.
By paying various expenses in cash and “off the books,” DiFabio, his business partner and others under-reported income and withholdings to the IRS from 2013-2015, Daily Voice previously reported.
Lord of the Pies features traditional New York-style round pies that begin with aged flour and a longer fermentation process, DiFabio says.
The crust is baked at 550 degrees in a gas-fired, flat top brick oven that he said is hand-crafted in the USA.
Lord of the Pies also offers a Detroit-style pizza, a triple fermented dough process, twice-baked, steel pan pizza with a caramelized Asiago cheese crust that it says is light, airy, and crispy. Only a limited amounted of these pies are prepared daily due to the lengthy process.
